The Thoughtful Bread Company
Having graduated with a degree computer science, Duncan
Glendinning realised a career in IT wasn't for him, and instead
decided to start a business that combined his two passions: the
environment and good food. The Thoughtful Bread Company is the
result: making bread using recycled, locally-sourced or even
foraged ingredients - he even barters some of his ingredients with
customers - the bakery produces bread so delicious its clients
include a double-Michelin starred restaurant and TV chef Hugh
Fearnley-Whittingstall. And the company is scrupulous about waste
as well: at the end of the day, Duncan gives excess loaves to local
homeless charity Julian House.
